This week in Ohio it’s supposed to “feel like” up to 110 degrees. The temps are only in the 90’s, but the air said “nah more”. Temperatures like that make dinner sounds so unappealing. I don’t want to cook inside, outside, and I don’t want to eat anything hot. Enter: Caprese Pasta Salad. Pasta sounded good today but I didn’t want to eat a flaming bowl of carbs. However, a bowl of cold carbs? Yes please.
Now, I didn’t invent the caprese pasta salad, but I just decided to wing this recipe today, so it may be similar or different than other ones you’ve seen. We have pasta salad at like every family function, so I was a little sick of our normal recipe.
Here you go! Caprese Pasta Salad!
Caprese Pasta Salad
Perfect spin on regular pasta salad for hot summer nights
- 1 Box Your Choice of Pasta
- 1 carton Grape Tomatoes
- 1/2 Red Onion
- 1 tub Fresh Mozzarella Balls
- Fresh Basil
- Fresh Garlic
- Dressing of Your Choice I used Krafts Italian Olive Oil Vinaigrette and Olive Garden Dressing.
- Garlic Salt
- Fresh Parmesan Cheese For garnishing
Boil Your box of noodles
Cut your grape tomatoes in half (if you wish)
Cut your red onion how ever you prefer it done. Either chunks, or long strips.
Chop up your fresh basil
Chop up and mince your fresh garlic
Drain, and dry off your mozzarella balls. If the pre-made balls are not available, chop up a fresh mozzarella log as best you can
Drain your pasta, and put it in a large bowl and let it cool off for a few minutes.
Add in everything you have prepared so far and give it a good stir.
Add in whatever dressing you have chosen (or just plain olive oil), and give it another good stir
add in as much garlic salt as you like, stir really well.
Top with freshly grated parm, and you're all done!
All in all, it’s super easy to make and its perfect to eat on a hot day. Here is a terrible close up of the dressings that I used!
I’ve also included a quick video, in case you hate reading. However, I’m guessing if you made it this far you probably don’t hate reading…Oh well, here it is anyway. Me preparing the Caprese Pasta Salad
I hope you enjoyed the recipe!! Let me know if you like it, or what you would do different. Like, I said this is a new recipe for me. However, for being new I think it’s pretty damn good. My kale chips would be a perfect side for this dish! Okay, maybe kale chips aren’t the perfect side for a salad, but I’ll find any excuse I can to eat them. They’re perfect.
Cheers!! If you live where these heat waves are hitting this week remember to stay VERY super hydrated, stay out of the direct sun, and enjoy some chilled wine (you deserve it).
